Vegetable Noodle Soup
Ingredients
- vegetables, diced in bite-size pieces, such as carrots, kabocha pumpkin, potatoes, zucchini, bell peppers
- tomatoes, diced in large pieces
- onion, garlic
- ground beef, optional
- bay leaves
- pasta (fusilli or bowtie)
Procedure
- if using ground beef, brown it separately
- brown the onion for 3 mins, then add garlic
- brown the sides of the kabocha and carrots
- add the tomatoes and enough water to cover the ingredients. add ground beef if using it
- count backwards how much time each ingredient takes to cook to determine when to add them:
- carrots, potatoes: 15 mins
- pasta: 10-15 mins, depending on brand and shape
- bell peppers: 10 mins
- zucchini: 10 mins
- kale: 8 mins
