Ratatouille

Ingredients
- 1 lg onion
- garlic
- 1 med eggplant
- 4 tomatoes
- 1 red bell pepper
- 1 zucchini
- bay leaves
- thyme
- ground beef (optional)
Procedure
- Saute ground beef separately, if using it
- Saute onion for 3 mins, then add garlic. Brown.
- Saute eggplant.
- Add zucchini.
- Add bell peppers.
- Add tomatoes, bay leaves, thyme, salt, and ground beef.
- Cover and cook for about 10 mins.
