Pizza Napoletana

Ingredients for 2 pizzas (500 g flour)
- 0.5 to 1 g dry yeast (3/8 tsp)
- 325 mL slightly warm water
- 500 g flour
- 12 g salt
Procedure
- dissolve the yeast in slightly warm water
- place 300 g flour in a large bowl
- add the warm water and mix with a spoon
- add about a third of the remaining 200 g of flour and mix
- add another third of the flour
- add the salt and mix
- add the remaining flour. knead the dough by hand for 2 mins
- rest for 20 mins
- work the dough, bringing a part from the bottom to the top, repeating evenly around the dough, for about a minute
- rest another 20 mins. repeat the previous step for a total of 3 times
- rest the dough in the refrigerator (use a bowl and plastic wrap) for 21 hours
- separate into two balls and let rise for 3 hours before baking
- shape each ball into an oiled pan and top the pizza with sauce and ingredients
- bake at 250ยบ C for around 15 mins in a ventilated oven
