Pizza Napoletana

Ingredients for 2 pizzas (500 g flour)

Procedure

  1. dissolve the yeast in slightly warm water
  2. place 300 g flour in a large bowl
  3. add the warm water and mix with a spoon
  4. add about a third of the remaining 200 g of flour and mix
  5. add another third of the flour
  6. add the salt and mix
  7. add the remaining flour. knead the dough by hand for 2 mins
  8. rest for 20 mins
  9. work the dough, bringing a part from the bottom to the top, repeating evenly around the dough, for about a minute
  10. rest another 20 mins. repeat the previous step for a total of 3 times
  11. rest the dough in the refrigerator (use a bowl and plastic wrap) for 21 hours
  12. separate into two balls and let rise for 3 hours before baking
  13. shape each ball into an oiled pan and top the pizza with sauce and ingredients
  14. bake at 250ยบ C for around 15 mins in a ventilated oven
