Pizza in teglia

For 2 pizzas

Ingredients

Procedure

  1. Dissolve yeast in water.
  2. Add part of the flour and mix. Repeat, but just before the end, add the sugar and salt.
  3. Rest 40 mins.
  4. Fold from bottom to top all around, 5 times. It is doable with a wooden spoon.
  5. Rest 40 mins.
  6. Repeat folding.
  7. Rest 2 hours.
  8. Dust corn flour (fubá mimoso) on table.
  9. Spread dough in a rough square shape. Fold the corners towards the center.
  10. Close the ends and form a ball.
  11. Cut the ball in half and reshape the halves into bowls.
  12. Rest balls, covered, for 50 mins.
  13. Grease pans.
  14. Spread dough in the pans and cover with sauce.
  15. Bake at 250ºC for about 12 mins, look for browning at edges.
  16. Add cheese and toppings. Bake for another 5 mins approximately. Do not brown cheese.
