Pizza in teglia

For 2 pizzas
Ingredients
- 5 g dry yeast
- 400 mL slightly warm water
- 500 g flour
- 5 g sugar
- 9 g salt
- 1 tablespoon olive oil, plus more for greasing the pan
- corn flour (fubá mimoso) for dusting
Procedure
- Dissolve yeast in water.
- Add part of the flour and mix. Repeat, but just before the end, add the sugar and salt.
- Rest 40 mins.
- Fold from bottom to top all around, 5 times. It is doable with a wooden spoon.
- Rest 40 mins.
- Repeat folding.
- Rest 2 hours.
- Dust corn flour (fubá mimoso) on table.
- Spread dough in a rough square shape. Fold the corners towards the center.
- Close the ends and form a ball.
- Cut the ball in half and reshape the halves into bowls.
- Rest balls, covered, for 50 mins.
- Grease pans.
- Spread dough in the pans and cover with sauce.
- Bake at 250ºC for about 12 mins, look for browning at edges.
- Add cheese and toppings. Bake for another 5 mins approximately. Do not brown cheese.
