Mu-shu Pork

Ingredients
- wood ear
- 500 g pork in thin strips
- 3 eggs
- 1 Japanese cucumber
- garlic
- ginger
- sesame oil
- 3 tbsp soy sauce
- 1 tbsp sake
- 1 tbsp sugar
Procedure
- Soak wood ear, then dice it coarsely
- Slice cucumber
- Scramble eggs separately
- Brown garlic and ginger in sesame oil
- Add pork
- Add a bit of water and simmer covered for 8 minutes, tossing halfway
- Add wood ear
- Stir-fry cucumber briefly
- Add pre-scrambled eggs
- Add sauce
