Focaccia with oregano

Ingredients
- 400 g flour
- 4 g dry yeast
- 8 g salt
- 300 mL warm water
- olive oil
- additional salt over dough
- oregano
- lard (solid fat for greasing the pan)
Procedure
- Warm water to around 40 deg C
- Mix yeast
- Combine flour and salt with a fork
- Add the flour little by little to the water, mixing with a spoon
- Cover for 30 mins
- Deflate and mix briefly with a spoon
- Cover for 30 mins again, repeat procedure a third time
- Let rise for 4 hours in a warm place (put a pan of boiling water in the oven)
- Grease the pan with lard (solid fat) and place the dough in it
- With oil on hands, spread the dough to fit in the entire pan
- Let it rise for an hour in the pan, inside the warm oven
- Pour a bit of water and oil on the surface
- Press on the dough roughly with fingertips to leave indentations
- Add salt and oregano to the surface
- Bake for 15 mins at 250 deg C, oven setting with heat on top and bottom and fan on
