Focaccia with oregano

Ingredients

Procedure

  1. Warm water to around 40 deg C
  2. Mix yeast
  3. Combine flour and salt with a fork
  4. Add the flour little by little to the water, mixing with a spoon
  5. Cover for 30 mins
  6. Deflate and mix briefly with a spoon
  7. Cover for 30 mins again, repeat procedure a third time
  8. Let rise for 4 hours in a warm place (put a pan of boiling water in the oven)
  9. Grease the pan with lard (solid fat) and place the dough in it
  10. With oil on hands, spread the dough to fit in the entire pan
  11. Let it rise for an hour in the pan, inside the warm oven
  12. Pour a bit of water and oil on the surface
  13. Press on the dough roughly with fingertips to leave indentations
  14. Add salt and oregano to the surface
  15. Bake for 15 mins at 250 deg C, oven setting with heat on top and bottom and fan on
