Chicken Cacciatore (traditional)

Ingredients
- 1 kg Chicken pieces (such as boneless and skinless thighs)
- 4 Garlic cloves, minced
- Oil
- 1 Onion, diced
- Sliced mushrooms
- Diced red bell pepper
- 100 mL white wine
- 6 tomatoes, peeled and seeded
- 150 g cherry tomatoes, peeled
To peel tomatoes easily, score the tomatoes' ends in a cross shape using a knife. Then, boil water (enough to cover the tomatoes) to blanch the tomatoes (1 minute for regular tomatoes, 20 seconds for cherry tomatoes). Peel them with a knife.
Procedure:
- Season chicken with garlic, salt, and pepper.
- Heat oil. Brown chicken in batches. Set aside.
- Brown onions.
- Deglaze with white wine. Reduce by half.
- Add all ingredients back in pot, except mushrooms.
- Cover and let the tomatoes become a sauce.
- Reduce until desired thickness, stirring occasionally. Estimate about 8 minutes cooking time for the mushrooms.
