Chicken Cacciatore (traditional)

Ingredients

To peel tomatoes easily, score the tomatoes' ends in a cross shape using a knife. Then, boil water (enough to cover the tomatoes) to blanch the tomatoes (1 minute for regular tomatoes, 20 seconds for cherry tomatoes). Peel them with a knife.

Procedure:

  1. Season chicken with garlic, salt, and pepper.
  2. Heat oil. Brown chicken in batches. Set aside.
  3. Brown onions.
  4. Deglaze with white wine. Reduce by half.
  5. Add all ingredients back in pot, except mushrooms.
  6. Cover and let the tomatoes become a sauce.
  7. Reduce until desired thickness, stirring occasionally. Estimate about 8 minutes cooking time for the mushrooms.
