Chicken Biryani

Ingredients
- 1/2 kg basmati rice
- 5 cloves garlic, crushed
- 2 inches ginger, grated
- 3 tbsp garam masala
- 1/2 tsp salt
- 1 cup plain yogurt
- 1/2 lime's juice
- handful mint, chopped
- 600 g chicken breast, cubed
- 1 med. onion, sliced
- 2 med. tomatoes, diced
- 1/2 med. red bell pepper, in 1/2 inch cubes
- 3 bay leaves
- Cashew nuts
Procedure
Marinate the chicken breast with condiments for about an hour.
Boil a large pot of water. Add the rice and parboil for 5-7 minutes. Strain and set aside.
Brown the onion. Add the chicken mixture. Add the tomatoes and bell pepper, and a little water. Steam for 10 minutes, turning the chicken after the initial 5 minutes.
Set the mixture aside. In the large pot, layer half of the rice. Add the chicken on top. Cover with the remaining rice. Sprinkle the cashew nuts on top. Cover with a lid and steam at the lowest heat for 20-25 minutes.
